Flower Cake Pops

It will make about 30 Flower Cake Pops.
It will take about 2 hours.

Ingredients:
-340gr butter at room temperature
-1 cup sugar
-1 tsp vanilla extract
-3 and 1/2 cup flour
-1/4 tsp salt

Misturar tudo na batedeira, fazer um disco e levar ao frigorifico cerca de 30 min. Estender a massa até ficar com cerca de 1cm.

Preparation:
-Mix all the ingredients in a mixer until the batter is consistent.
-Wrap the dough in plastic film and allow it to rest in the fridge during 30 minutes.
-Stretch the dough with the rolling pin until it’s about 1cm.
-Use flower cutters to cut the dough.
-Let it cook in the oven at 180 degrees celsius until the cookies are lightly coloured.
-Apply lollypop sticks immediatly after taking the cookings out of the oven. You should use some icing sugar moist in a pich of water as a glue to the sticks.

For the decoration:
-Mix 1 cup of icing sugar and 1/3 tsp of water and a 1/3 tsp of lemon juice. You should achieve a thick consistency. Add a little more water/icing sugar if necessary. Distribute this mixture in little containers and add food coloring to each one. Now you have your painting prepared to action!
-Decorate your cooled cake pops with the icing sugar and some funny confetis if you prefer.

Funny and Easy Cupcakes

It will make about 11 medium-size cupcakes
It will take about 30 minutes

Ingredients:
-250ml milk
-1 tbsp butter, melted
-1 egg
-250gr flour
-180gr sugar
-1 tsp baking powder

Preparation:
-Pre-heat the oven at 180 degrees celsius
-Mix all the wet ingredients in one large bowl
-Add the dry ingredients with a wooden spoon
-Fill 11 holes of a cupcake form (first with the cupcake paper, then the batter)
-Leave at the oven until the cupcakes are lightly coulored
-Let the cupcakes cool completely in a wire tray

For the decoration:
-Mix 1 cup of icing sugar and 1/3 tsp of water and a 1/3 tsp of lemon juice. You should achieve a thick consistency. Add a little more water/icing sugar if necessary.
-Decorate your cooled cupcakes with the icing sugar and some funny confetis. You can also use smarties or other little candies.

Aromatic Chicken Rice

It will make about 4 portions
You will need about 30 minutes to prepare it

Ingredients:
-2 cups of rice
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Oregano, paprika and saffron/curry
-400gr of chicken breast, chopped
-1 tsp of butter
-2 tbsp of olive oil
-1 cup of white wine
-3 cups of water
-pinch of salt

Preparation:
-Put the butter, olive oil, salt, oregano, paprika, saffron/curry, bay leaf, garlic and onion in one saucepan in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Add the chicken and let it color, stirring ocasionally. Add the white wine.
-Add the rest of the ingredients. Stir occasionally and maintain it moist until cooked (around 20 minutes).

Cod with Chickpeas

It will make about 4 portions
You will need about 20 minutes to prepare it

Ingredients:
-400gr of cooked chickpeas
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-400gr of Cod
-water
-pinch of salt

Preparation:
-Boil water in a saucepan and add all the ingredients. Stir occasionally and maintain it moist until cooked (around 20 minutes).

Cod and Tomato Rice

It will make about 4 portions
You will need about 30 minutes to prepare it

Ingredients:
-2 cups of rice
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Thyme, parsley and coriander (at least, parsley)
-400gr of cod, shredded
-1 cup tomato sauce
-1 tsp of butter
-water
-pinch of salt

Preparation:
-Put the butter, salt, rice, garlic and onion in one saucepan in medium heat. Stir it, during around 5 minutes.
-Add the rest of the ingredients. Fill with enough water. Stir occasionally and maintain it moist until cooked (around 20 minutes).

Fish Rice

It will make about 4 portions
You will need about 30 minutes to prepare it

Ingredients:
-2 cups of rice
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Thyme, parsley and coriander (at least, parsley)
-200gr of monkeyfish
-300gr of whitefish or ling
-1 tsp of butter
-water
-pinch of salt

Preparation:
-Put the butter, salt, rice, garlic and onion in one saucepan in medium heat. Stir it, during around 5 minutes.
-Add the rest of the ingredients. Fill with enough water. Stir occasionally and maintain it moist until cooked (around 20 minutes).

Comfy Food Ready-To-Go

Busy mums and dads are always looking for finding just some extra minutes each day of their already so busy day. Aren’t you the same?

One of the most important part of your life is to eat. You should always eat well and have healthy cooking habits. Not only because of your health but for all of your family’s well being, specially when you have kids.

So, in this post lets talk about some great recipe ideas to cook really good but simple and easy comfort food.

Specially now, I’m worried about the next big and happy phase of my life: my little girl (and second child) is going to meet this world in just a few weeks! 🙂 So, I’m preparing some comfy food in bigger quantities, and I’ll be freezing it in separate bowls. I’m using some tupperware bowls, as well as some aluminium boxes.
