Hi all!
As some of you know, I recently launched a new blog: Expat Mum in Luxembourg.

At the begining, I thought it would make sense to maintain both blogs, with separate themes, but quickly I figured it out that my themes are always around Family Life and Kids.

So, I decided that the new blog will be my new online ‘home’, with new and fresh ideas. As for the Desperate Housekeeping for Busy Mums and Dads, I’ll start to gradually migrate the best contents into the new blog as well.

Strawberries – Make the most of it!

As you know, strawberries are a very delicate fruit that should be eaten in a very short period of time. As I love to eat strawberries, everytime I see a good deal I buy more at once. To guarantee its quality for up to 4 days, I usually use the following tip:

– Prepare the strawberries by washing them and taking out their leaves;
– Cut in halfs;
– Put them in a bowl;
– Add 2 tbsp of sugar, half a cinamon stick and a little water;
– Mix just a little and place the bowl in the fridge.

This way you preserve the quality of the strawberries and even get a lovely and light syrup.

Note: If you’d like a special touch, simply add one tbsp of Port Wine! 😉

Super Quick Mozzarella Calzone

If you are in a rush and you’re not in the mood for a simple pizza, you can try this calzone recipe. It’s easy and you can have it done in just 40 minutes!

It will make 2 portions.

First, you’ll need to make the dough, using the mini-pizzas recipe. Divide the dough in two parts.

20121211-192253.jpg Add tomato sauce, oreganos, 2 chopped mozzarella cheeses, ham, olives and grated cheese. Close the dough into a half moon and press the borders with your fingers. Use a fork to make small holes.

Strawberry Cheesecake

This is my favourite cheesecake recipe ever! Try it and let me know how did you feel about it! 😉

It will make about 10 portions.
You will need about 20 minutes to prepare it and at least 2 hours in the fridge.

Ingredients:
-200gr butter cookies (not too much sweet)
-100gr melted butter
-250gr ricotta cheese
-100gr condensed milk
-8 sheets of colourless gelatine
-200ml whipped cream
-pinch of salt
-200ml strawberry jam

Preparation:
Part 1: Cookie Base
-Mash the cookies and misk it with the butter.
-Pour this mixture in a round cake pan.

Part 2: Middle Cream
-Place 6 sheets of gelatin in cold water.
-In large bowl, mix the heavy cream with the ricotta.
-In a small pan, mix the condensed milk with the drained gelatin sheets within medium heat until melted.
-Add the condensed milk to the cream mixture and whisk smoothly.
-Pour this mixture on top of the cookie base.
-Allow it to set in the fridge for at least 1 hour.

Part 3: Topping
-Place the remaining sheets of gelatin in cold water.
-Whisk the jam.
-In a small pan, mix half of the jam with the drained gelatine sheets within medium heat until melted.
-Add the melted mixture to the rest of the jam and whisk it.
-Pour this mixture on top of the middle cream.
-Allow it to set on the fridge for at least 1 hour.

Roasted Chicken In-A-Rush

Are you always in a rush? Does it always seem you don’t have enough time to cook? Well, this is one of my favourite recipes in such tricky days.

It will make about 4 portions.
You will need about 55 minutes to have it ready, but it will only take you about 10 minutes to prepare.

Ingredients:
-2 chicken breasts or big chicken legs
-1 garlic clove, chopped
-1 bay leaf
-Oregano and paprika
-4 tbsp of olive oil
-1 cup of white wine
-2 tbsp of tomato sauce
-3 cups of water
-Beef consommé
-pinch of salt

Preparation:
-Pre-heat the oven at 180 degrees celsius.
-Put the chicken on a tray and rub the garlic, salt, oregano, paprika and olive oil on the chicken.
-Add the rest of the ingredients.
-Let it in the oven around 45 minutes, until coloured.

Cod with Potatoes, Eggs and Crispy Bread Crumbs

It will make about 4 portions
You will need about 40 minutes to prepare it

Ingredients:
-500gr of cod, shredded
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-parsley, fresh
-2 eggs
-400gr potatoes, unpeeled
-olive oil
-bread crumbs (corn bread, if possible)
-pinch of salt

Preparation:
-Boil water in a saucepan. Add the cod and the eggs. Let it cooked for about 15 minutes. Cut the eggs in small pieces.
-Cut the potatoes in cubes and fry it, lightly.
-In a separate saucepan, add the olive oil, salt, bay leaf, garlic and onion. Let it cook in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Pre-heat the oven at 180 degrees celsius.
-Once everything is cooked, you’ll need to join the ingredients in a recipient appropriate to the oven.
-First, you should add all the 3 cooked mixtures, as well as the parsley, chopped. Stir it well. Then, add the bread crumbs to cover the mixture.
-Let it finish cooking in the oven until crispy (around 20 minutes).

Chicken Beer Spaguetti

It will make about 4 portions
You will need about 40 minutes to prepare it

Ingredients:
-400gr spaguetti
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Oregano and paprika
-600gr of chicken
-1 tsp of butter
-2 tbsp of olive oil
-1 small bottle of beer (25cl)
-3x beer bottle measure of water
-pinch of salt

Preparation:
-Put the butter, olive oil, salt, oregano, paprika, bay leaf, garlic and onion in one saucepan in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Add the chicken and let it color, stirring ocasionally. Add the beer and let it cook for 5 more minutes. Finally, add the water. Stir occasionally and maintain it moist until cooked (around 30 minutes).
-During the last 10 minutes of cooking time, cook the spaguetti ‘al dente’ (boil water in a separate bowl, add the spaguetti, salt and olive oil. Let it boil for just 5 minutes. Serve immediatelly).

Meat Pie

It will make about 4 portions
You will need about 40 minutes to prepare it

Ingredients:
-pastry
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Oregano, paprika and saffron/curry
-400gr of minced meat (for example, porc and beef)
-1 tsp of butter
-2 tbsp of olive oil
-1 cup of white wine
-1 cup of tomato sauce
-1 cup of macedonia (for example, peas, corn and carrots, chopped)
-3 cups of water
-pinch of salt

Preparation:
-Pre-heat the oven at 180 degrees celsius.
-Put the butter, olive oil, salt, oregano, paprika, saffron/curry, bay leaf, garlic and onion in one saucepan in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Add the meat and let it color, stirring ocasionally. Add the white wine.
-Add the rest of the ingredients. Stir occasionally and maintain it moist until cooked (around 20 minutes).
-Put the cooked mixture in an appropriate oven round recipient and cover it with pastry. Don’t forget to make some holes in the pastry to prevent accidents.

Lasagne

It will make about 4 portions
You will need about 1 hour to prepare it

Ingredients:
-Lasagne pastry sheets
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-Oregano, paprika and saffron/curry
-400gr of minced meat (for example, porc and beef)
-1 tsp of butter
-2 tbsp of olive oil
-1 cup of white wine
-2 cups of tomato sauce
-3 cups of water
-pinch of salt
For the white sauce:
-2 tbsp butter
-1 tbsp flour
-250ml milk
-pinch of salt
-cheese, grated

Preparation:
-Pre-heat the oven at 180 degrees celsius.

Meat:
-Put the butter, olive oil, salt, oregano, paprika, saffron/curry, bay leaf, garlic and onion in one saucepan in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Add the meat and let it color, stirring ocasionally. Add the white wine.
-Add the rest of the ingredients. Stir occasionally and maintain it moist until cooked (around 20 minutes).

White Sauce:
-In a separate saucepan, put the butter and flour n low heat. Let it melt, stirring all the time. Add the milk and salt. Let it get thicker and add the cheese. Turn off the heat.

Lasagne:
-In an appropriate rectangular bowl, put some meat, then some sheets of lasagne pastry, and finally some white sauce. Repeat this process for 3 times, finishing with the white sauce. Sparkle with a little more grated cheese.
-Let it in the oven around 30 minutes, until coloured.

Mini Pizzas

It will make about 12 mini pizzas
It will take about 30 minutes

Ingredients:
-2 cups flour
-1 and 1/2 cup hot water
-1 tbsp oil
-1 tsp baking powder
-1/4 tsp salt

Preparation:
-In a large bowl, mix the hot water with the baking powder with a spoon. Add the oil and salt and mix again. Finally, add the flour and mix well, first with the spoon, then with your hands, until soft.
-Divide the dough in 12 small balls of dough.
-Stretch each ball of dough with the rolling pin until it’s thin.
-Use taste and imagination to decorate each mini pizza!

Tip:
For the base of each pizza you could use tomate sauce, dried oreganos and grated cheese.
-Let it cook in the oven at 180 degrees
