Cod with Potatoes, Eggs and Crispy Bread Crumbs
It will make about 4 portions
You will need about 40 minutes to prepare it
-500gr of cod, shredded
-1 small onion, chopped
-1 garlic clove, chopped
-1 bay leaf
-400gr potatoes, unpeeled
-bread crumbs (corn bread, if possible)
-pinch of salt
-Boil water in a saucepan. Add the cod and the eggs. Let it cooked for about 15 minutes. Cut the eggs in small pieces.
-Cut the potatoes in cubes and fry it, lightly.
-In a separate saucepan, add the olive oil, salt, bay leaf, garlic and onion. Let it cook in low heat. Stir it, during around 5 minutes, until the onion is transparent.
-Pre-heat the oven at 180 degrees celsius.
-Once everything is cooked, you’ll need to join the ingredients in a recipient appropriate to the oven.
-First, you should add all the 3 cooked mixtures, as well as the parsley, chopped. Stir it well. Then, add the bread crumbs to cover the mixture.
-Let it finish cooking in the oven until crispy (around 20 minutes).
